The Steak and Cheese
Shaved steak goes on the flat top, gets chopped as it cooks, and the cheese goes on while it is still on the griddle so it melts down into the meat instead of sitting on top of it. Then it goes into the bread. That is the whole method and there is not much more to it, which is exactly why it either gets done right or it does not.
The steak bomb is the same thing with peppers, onions and mushrooms cooked into it, and salami added. It is the bigger, messier order, and it is the one regulars keep coming back for.
Both come small or large. Small is a proper lunch. Large is a large.
